Soshi Ueno

Soshi Ueno

Born in 1977 in Kumamoto. After stints at restaurants and hotels in Japan, Mr. Ueno went to Europe in 2002. After training in Paris, the homeland of French cuisine, he worked at restaurants including Les Ambasssadeurs at the five-star Hotel de Crillon. In 2007 he returned to Japan and was appointed Deputy Executive Chef at Beige Alain Ducasse Tokyo. In 2012 Alain Ducasse, a giant of the French cuisine world, showed his tremendous confidence in Mr. Ueno by appointing him Executive Chef of Le Comptoir de Benoit Osaka. He is dedicated to “extracting the essence of each ingredient and tailoring its preparation method to allow its flavor to shine.”
